Makes 4 servings
1 lb ground beef
1 yellow onion, finely chopped
2 carrots, finely chopped
2 stalks celery, finely chopped
4 cloves garlic, minced
6 oz can tomato paste
2 tsp dried thyme
8 oz vegetable broth
1 lb zucchini, spiralized
1 lb yellow summer squash, spiralized
Olive oil, salt and pepper
- Heat a drizzle of olive oil over medium high heat in a large saute pan. Add onion, carrots and celery and sautee for about 5 minutes until softened. Add garlic and stir briefly.
- Crumble ground beef into pan and cook, stirring occasionally until the beef is thoroughly cooked. Add tomato paste and thyme along with salt and pepper to taste and stir for a minute or two longer before adding vegetable both. Simmer for about 5 minutes.
- While sauce is simmering, heat a drizzle of olive oil in another large saute pan. Toss spiralized zucchini and summer squash until softened, about 5 minutes.
- Serve zoodles in bowls, topped with bolognese sauce.
