Zoodles Bolognese

Zoodles Bolognese

Makes 4 servings

1 lb ground beef
1 yellow onion, finely chopped
2 carrots, finely chopped
2 stalks celery, finely chopped
4 cloves garlic, minced
6 oz can tomato paste
2 tsp dried thyme
8 oz vegetable broth
1 lb zucchini, spiralized
1 lb yellow summer squash, spiralized
Olive oil, salt and pepper

Preparation:

  1. Heat a drizzle of olive oil over medium high heat in a large saute pan. Add onion, carrots and celery and sautee for about 5 minutes until softened. Add garlic and stir briefly.
  2. Crumble ground beef into pan and cook, stirring occasionally until the beef is thoroughly cooked. Add tomato paste and thyme along with salt and pepper to taste and stir for a minute or two longer before adding vegetable both. Simmer for about 5 minutes.
  3. While sauce is simmering, heat a drizzle of olive oil in another large saute pan. Toss spiralized zucchini and summer squash until softened, about 5 minutes.
  4. Serve zoodles in bowls, topped with bolognese sauce.
