Avocado Toast with Egg
Makes 2 servings
1 slice whole grain bread
1/2 very large avocado (or whole medium to large avocado)
2 tbsp minced red onion
1 radish, thinly sliced
1 small handful arugula or other salad greens
Olive oil, salt and pepper
- Toast bread. Peel avocado and mash with red onion and salt to taste. Spread over toast.
- Sprinkle salad greens and sliced radish over top of avocado toast.
- Heat a drizzle of olive oil in a large saute pan over medium low heat. Fry eggs.
- Top avocado toast with fried eggs and top with freshly ground pepper.
