Cheddar and Chive Scramble with Strawberries
Makes 2 servings
4 eggs, beaten
1 oz cheddar cheese, grated
1 tbsp minced chives
8 - 12 strawberries, rinsed and halved
Olive oil, salt and pepper
- Heat a drizzle of olive oil in a large saute pan over medium low heat. Add eggs and chives, stirring occasionally until almost firm.
- Add cheddar and stir until melted.
- Serve with a side of halved strawberries!
