Asparagus, Goat Cheese and Chive Scramble

Makes 2 servings

4 eggs, beaten
4 stalks asparagus, cut into 1" pieces and previously cooked
1 tbsp minced chives
2 oz crumbled goat cheese
8 - 12 strawberries, rinsed and halved
Olive oil, salt and pepper

Preparation:

  1. Heat a drizzle of olive oil in a large saute pan over medium low heat. Add asparagus and stir to heat. Add eggs and chives. Stir until eggs are almost firm.
  2. Add goat cheese and stir until eggs are firm and cheese is softened.
  3. Serve with a side of halved strawberries
