Asparagus, Goat Cheese and Chive Scramble
Makes 2 servings
4 eggs, beaten
4 stalks asparagus, cut into 1" pieces and previously cooked
1 tbsp minced chives
2 oz crumbled goat cheese
8 - 12 strawberries, rinsed and halved
Olive oil, salt and pepper
- Heat a drizzle of olive oil in a large saute pan over medium low heat. Add asparagus and stir to heat. Add eggs and chives. Stir until eggs are almost firm.
- Add goat cheese and stir until eggs are firm and cheese is softened.
- Serve with a side of halved strawberries
