Flank Steak with Sauteed Beet Greens and Creamy Horseradish Beets

Ingredients listed in recipe. Note that we substituted fresh horseradish root grated and mixed with vinegar and salt for the prepared horseradish.

In Advance
Roast the beets and marinate the steak as described in recipe. Note that we marinated the steak overnight.

Preparation:

Follow instructions in recipe to prepare dish. If the weather does not cooperate with grilling, the flank steak can be broiled for about 4 minutes per side or until medium rare (130 degrees).
