Peanut Butter Chia Oatmeal with Bananas
Makes 2 servings
2/3 cup oatmeal
1 tbsp chia seeds
2 tbsp peanut butter
1/2 tsp cinnamon
Pinch of salt
1 ripe banana, sliced
1/2 cup milk
- In a small saucepan combine oatmeal, 1-1/3 cups water, chia seeds, peanut butter, cinnamon, and salt. Bring to a boil, reduce heat to low and simmer, stirring occasionally, for 10 minutes or until water is absorbed.
- Serve oatmeal with milk and top with banana slices.
Note - this recipe is even easier to make if you have a rice cooker. You can just combine the ingredients listed in step 1 in the rice cooker and set it to cook unattended - perfect for weekday mornings!
