Prawns in Habanero Sauce
This simple habanero sauce has just a few ingredients but is amazingly rich and complex.
Makes 4 servings
1 lb roma tomatoes
1/2 white onion, thinly sliced
1 habanero pepper
1-1/2 lbs prawns
1 bunch kale
Olive oil, salt and pepper to taste
Brown rice or cauliflower rice for serving
Heat broiler to high. Place tomatoes on a baking sheet and broil for 6 minutes, then flip over and broil on other side for an additional 6 minutes. Allow to cool.
- Peel and mash or chop tomatoes. Slice habanero in half.
- Heat a drizzle of olive oil in a medium saucepan. Add onion and fry until softened and starting to brown. Add tomatoes and habanero pepper. Simmer for about 15 minutes.
- While the sauce simmers, rinse the kale and remove its stems. Place in a steamer insert.
- Once sauce is done simmering, put kale on to steam for about 5 minutes. Add prawns to sauce and simmer for about 5 minutes until opaque.
