Prawns in Habanero Sauce

This simple habanero sauce has just a few ingredients but is amazingly rich and complex.

Prawns in Habanero Sauce

Makes 4 servings

1 lb roma tomatoes
1/2 white onion, thinly sliced
1 habanero pepper
1-1/2 lbs prawns
1 bunch kale
Olive oil, salt and pepper to taste
Brown rice or cauliflower rice for serving

In Advance:

Heat broiler to high. Place tomatoes on a baking sheet and broil for 6 minutes, then flip over and broil on other side for an additional 6 minutes. Allow to cool.


  1. Peel and mash or chop tomatoes. Slice habanero in half.
  2. Heat a drizzle of olive oil in a medium saucepan. Add onion and fry until softened and starting to brown. Add tomatoes and habanero pepper. Simmer for about 15 minutes.
  3. While the sauce simmers, rinse the kale and remove its stems. Place in a steamer insert.
  4. Once sauce is done simmering, put kale on to steam for about 5 minutes. Add prawns to sauce and simmer for about 5 minutes until opaque.
