Oatmeal with Cinnamon and Frozen Peaches
Similar to the blueberries in last week's frozen blueberry yogurt bowl, peaches are a summer fruit that freezes well and makes a delicious breakfast during the chilly months.
Makes 2 servings
2/3 cup oatmeal
8 oz frozen peach slices, defrosted in fridge overnight and cut into chunks
1/2 tsp cinnamon
Pinch of salt
2 tbsp sliced almonds
1 cup milk
- In a small saucepan combine oatmeal, 1-1/3 cups water, peaches, cinnamon, and salt. Bring to a boil, reduce heat to low and simmer, stirring occasionally, for 10 minutes or until water is absorbed.
- Serve oatmeal with milk and sprinkle with sliced almonds.
Note - this recipe is even easier to make if you have a rice cooker. You can just combine the ingredients listed in step 1 in the rice cooker and set it to cook unattended - perfect for weekday mornings!
