Banana Chia Pudding

This banana chia pudding makes a delicious breakfast or even a dessert. It is surprisingly sweet tasting from just the natural sugars in the banana.

Banana chia pudding

Makes 4 servings

2-1/2 tbsp chia seeds
1 can full fat coconut milk
2 large bananas
1/2 tsp cinnamon
1/2 tsp vanilla
Pinch of salt
4 tbsp slivered almonds

In Advance:

  1. In a jar, mix chia seeds with 1 cup of water and allow to sit for 30 minutes.
  2. In a blender, whirl together bananas, coconut milk, cinnamon, salt and vanilla. Transfer to a storage container and thoroughly stir in the chia seed and water mixture.


  1. Toast slivered almonds under the broiler for a minute or two until lightly browned.
  2. Serve pudding in bowls topped with 1 tbsp of slivered almonds.
