Kale and Red Pepper Scramble with Feta

This Greek-inspired scramble makes a savory, protein and vegetable rich start to the day!

CKale and Red Pepper Scramble with Feta

Makes 2 servings

1/4 cup yellow onion, finely chopped
Generous handful of baby kale
1/2 red pepper, diced
4 eggs, beaten
1 oz feta cheese, crumbled
Olive oil, salt and pepper

Preparation:

  1. Heat a small drizzle of olive oil over medium heat in a nonstick pan. Add onion and red pepper, sauteeing until softened, about 5 minutes. Add baby kale and stir until wilted. Season with salt and pepper.
  2. Add eggs and cook, stirring occasionally. When eggs are almost set, add feta and continue cooking until eggs are firm and feta is slightly melted.
