Southwest Scramble with Monterey Jack
Makes 2 servings
1/2 sweet onion, thinly sliced
1 red pepper, diced
4 oz mushrooms, sliced
2 oz spinach
3 eggs, beaten
2 oz Monterey Jack cheese, grated
Olive oil, salt and pepper
- Heat a small drizzle of olive oil over medium heat in a nonstick pan. Add onion, red pepper and mushrooms, sauteeing until softened, about 5 minutes. Add spinach and stir until wilted. Season with salt and pepper.
- Add eggs and cook, stirring occasionally. When eggs are almost set, add cheese and continue cooking until eggs are firm and cheese is melted.
