Southwest scramble with Monterey Jack

Makes 2 servings

1/2 sweet onion, thinly sliced
1 red pepper, diced
4 oz mushrooms, sliced
2 oz spinach
3 eggs, beaten
2 oz Monterey Jack cheese, grated
Olive oil, salt and pepper


  1. Heat a small drizzle of olive oil over medium heat in a nonstick pan. Add onion, red pepper and mushrooms, sauteeing until softened, about 5 minutes. Add spinach and stir until wilted. Season with salt and pepper.
  2. Add eggs and cook, stirring occasionally. When eggs are almost set, add cheese and continue cooking until eggs are firm and cheese is melted.
