Pumpkin Spice Oatmeal with Walnuts
This oatmeal makes a quick, healthy breakfast and is loaded with Fall flavor.
Makes 2 servings
3/4 cup oatmeal
1/2 cup canned pumpkin puree
2 tbsp walnut pieces
1/2 tsp cinnamon
1/2 tsp ground ginger
Pinch of salt
1 cup milk
1/2 Fuji apple, cored and chopped
- In a small saucepan combine oatmeal, 1-1/2 cups water, pumpkin puree, walnuts, pumpkin pie spice and salt. Bring to a boil, reduce heat to low and simmer, stirring occasionally, for 10 minutes or until water is absorbed.
- Serve oatmeal with milk and chopped apple.
Note - this recipe is even easier to make if you have a rice cooker. You can just combine the ingredients listed in step 1 in the rice cooker and set it to cook unattended - perfect for weekday mornings!
