BLTA Plate with Fried Egg

This breakfast has all the flavors of a BLT sandwich in a vegetable-rich, low carb plate.

Makes 2 servings

2 eggs
2 slices bacon, cooked and crumbled
1 large tomato
1/2 avocado, diced
2 oz salad mix or frisee
1/2 tsp balsamic vinegar
Olive oil, salt and pepper

Preparation:

  1. Slice tomato and arrange on plates. Sprinkle with diced avocado.
  2. In a large bowl, toss salad mix or frisee with balsamic vinegar, a touch of olive oil, crumbled bacon, plus salt and pepper to taste. Mound on top of avocado and tomatoes and top each plate with a fried egg.

Time Savers:

  • Pre-cook a package of bacon at beginning of week. Bacon can optionally be reheated under broiler or in microwave for this dish.
