Zucchini and Black Bean Hash with Fried Egg

Zucchini and black beans with fried egg

Makes 4 servings

4 eggs
1 can black beans, drained
1/4 red onion, finely chopped
2 zucchini, diced
1/2 red bell pepper, diced
1 jalapeno, finely chopped
1/2 tsp cumin
1/2 tsp paprika
2 tbsp chopped cilantro
1 avocado, sliced
Olive oil, salt and pepper

Preparation:

  1. Heat a drizzle of olive oil over medium heat in a nonstick pan. Add onion and jalapeno and sautee a few minutes until they begins to soften. Add zucchini and sautee about 5 minutes longer, then add red pepper and sautee until all vegetables are softened and beginning to brown.
  2. Add cumin along with salt and pepper to taste and stir for a moment, then add black beans and cook a minute or two longer to heat them. Remove from heat, cover and allow to sit for a few minutes while cooking eggs.
  3. Serve zucchini and black bean mixture in bowls, topped with cilantro, avocado slices and a fried egg.
