New York Steak with Mashed Cauliflower and Green Beans

If you're going to eat lower carb, you might as well treat yourself! Instead of the usual high carb mashed potatoes, this steak has a creamy, garlicky side of mashed cauliflower along with freshly steamed green beans.

Makes 4 servings

1-1/2 lbs NY Steak
1 tbsp Montreal steak seasoning
1 head cauliflower
2 cloves garlic, peeled
1/2 cup plain yogurt
1 tbsp butter
1 lb green beans
Olive oil, salt and pepper

Preparation:

  1. Heat broiler on high.
  2. While broiler heats, cut cauliflower into florets and cover with water in a large saucepan. Trim green beans and cut into 2 inch lengths, placing them in the steamer insert of a vegetable steamer.
  3. Broil steak for 8 minutes per side at 8 inches from the broiler or until desired doneness is reached.
  4. Bring cauliflower and garlic cloves to a boil and cook for 15 minutes until well cooked. Drain thoroughly and mash together with yogurt, butter and salt and pepper to taste.
  5. Steam green beans for 4-5 minutes or until just tender.
