Spinach and Bacon Scramble with Diced Tomato
Spinach, bacon and onion are a classic combination for a scramble any time of year. In summer, they're even better topped with fresh diced tomatoes!
Makes 1 serving
2 tbsp diced red onion
1 slice cooked bacon, crumbled
Generous handful of spinach
2 eggs, beaten
1/2 cup diced tomatoes
Olive oil, salt and pepper
- Heat a drizzle of olive oil over medium heat in a nonstick pan. Add onion and sautee a few minutes until softened. Add bacon and cook a minute longer, then add spinach and stir until wilted. Season with salt and pepper.
- Add eggs and cook, stirring occasionally until eggs are firm.
- Serve topped with diced tomatoes.
