Spinach and Bacon Scramble with Diced Tomato

Spinach, bacon and onion are a classic combination for a scramble any time of year. In summer, they're even better topped with fresh diced tomatoes!

Makes 1 serving

2 tbsp diced red onion
1 slice cooked bacon, crumbled
Generous handful of spinach
2 eggs, beaten
1/2 cup diced tomatoes
Olive oil, salt and pepper

Preparation:

  1. Heat a drizzle of olive oil over medium heat in a nonstick pan. Add onion and sautee a few minutes until softened. Add bacon and cook a minute longer, then add spinach and stir until wilted. Season with salt and pepper.
  2. Add eggs and cook, stirring occasionally until eggs are firm.
  3. Serve topped with diced tomatoes.
