Blistered Corn and Salmon Salad with Charred Peaches
On a recent summer evening, we decided to revisit one of our favorite summer recipes from Hello Fresh
Hello Fresh is a meal delivery service that's great for when you don't have time to plan meals or shop for groceries. Their recipes are healthy and flavorful enough that we've added several into our repertoire to enjoy even during times when we have time to shop and plan meals.

Note that Hello Fresh conveniently packages the ingredients needed for your meal to serve either 2 or 4 people, so their recipe refers to some amounts as "units". Here are the amounts we used when revisiting the recipe for 4 servings:
1-1/2 lbs salmon fillet
3 ears corn
5 oz baby arugula
3 green onions
1/4 cup chopped cilantro
2 oz feta cheese
1 tsp cumin
1/2 tsp coriander
2 tbsp white wine vinegar
Olive oil, salt and pepper
Prepare salmon and salad according to recipe. Note that the recipe is written for 2 servings, not 4, so adjust the amounts accordingly (see above for correct quantities and use 3 tbsp of olive oil rather than the 1-1/2 tbsp listed in the recipe). We also chose to prepare the salmon, corn and peaches on the grill rather than searing them in a pan.
Note - If two people are working on this meal, it works well for one to grill or sear the salmon, corn and peaches while the other prepares the salad.
