Zucchini and Basil Scramble

Zucchini and basil make a delicious combination for a summer scramble. Goat cheese or cream cheese would be tasty additions to this if you have some on hand.

Zucchini and basil scramble

*Zucchini and basil scramble Wasa cracker with mashed avocado (optional) Black coffee*

Makes 1 serving

1/2 medium sized zucchini, grated
2 tbsp shredded basil leaves
1 tbsp chopped chives
2 eggs, beaten
1-2 cherry tomatoes, sliced
Olive oil, salt and pepper

Preparation:

  1. Heat a small drizzle of olive oil over medium heat in a nonstick pan. Add zucchini and sautee until softened, about 5 minutes. Season with salt and pepper.
  2. Add eggs and cook, stirring occasionally. When eggs are almost set, add basil and chives and continue cooking until eggs are firm.
  3. Serve topped with sliced cherry tomatoes and optional side of avocado on Wasa cracker or toast.
