Southwestern Salad with Cilantro Lime Dressing

This salad makes a refreshing, healthy summer dinner that comes together quickly.

Makes 4 servings

1 bag romaine hearts
2 15oz cans black beans
2 ears corn, husked and kernels cut from corn.
1 large tomato, diced (we used an heirloom tomato)
1 avocado, diced
4 green onions, sliced

Juice of 1 lime (about 3 tbsp)
2 tbsp finely chopped cilantro
1 clove garlic, crushed
1 fresno or jalapeno chile, finely chopped
1/4 cup olive oil
Salt and pepper


  1. To make dressing, combine lime juice, cilantro, garlic and chile with salt and pepper to taste in a small bowl. Slowly whisk in olive oil.
  2. Chop romaine. Arrange in large salad bowls and drizzle with dressing.
  3. Arrange black beans, corn and diced tomato on top of romaine. Sprinkle with green onions and diced avocado.
