Southwestern Salad with Cilantro Lime Dressing
This salad makes a refreshing, healthy summer dinner that comes together quickly.
Makes 4 servings
1 bag romaine hearts
2 15oz cans black beans
2 ears corn, husked and kernels cut from corn.
1 large tomato, diced (we used an heirloom tomato)
1 avocado, diced
4 green onions, sliced
Juice of 1 lime (about 3 tbsp)
2 tbsp finely chopped cilantro
1 clove garlic, crushed
1 fresno or jalapeno chile, finely chopped
1/4 cup olive oil
Salt and pepper
- To make dressing, combine lime juice, cilantro, garlic and chile with salt and pepper to taste in a small bowl. Slowly whisk in olive oil.
- Chop romaine. Arrange in large salad bowls and drizzle with dressing.
- Arrange black beans, corn and diced tomato on top of romaine. Sprinkle with green onions and diced avocado.
