Mushroom and Spinach Scramble with Cheddar and Bacon

Mushrooms, spinach and bacon make a savory breakfast scramble and cheddar cheese adds richness and bite.

Makes 1 serving

3 mushrooms, sliced
Generous handful of spinach
1 cooked slice of bacon, crumbled
2 eggs, beaten
1/2 oz sharp cheddar, grated
Olive oil, salt and pepper

Preparation:

  1. Heat a small drizzle of olive oil over medium heat in a nonstick pan. Add mushrooms and sautee until softened, about 5 minutes. Season with salt and pepper. Add spinach and bacon, then stir until spinach is wilted.
  2. Add eggs and cook, stirring occasionally. When eggs are almost set, add cheddar and continue cooking until cheddar is melted.

Time Savers:

  • Cook a package of bacon and a container of presliced mushrooms at the beginning of the week and add them to scrambles throughout the week.
