Mushroom and Spinach Scramble with Cheddar and Bacon
Mushrooms, spinach and bacon make a savory breakfast scramble and cheddar cheese adds richness and bite.
Makes 1 serving
3 mushrooms, sliced
Generous handful of spinach
1 cooked slice of bacon, crumbled
2 eggs, beaten
1/2 oz sharp cheddar, grated
Olive oil, salt and pepper
- Heat a small drizzle of olive oil over medium heat in a nonstick pan. Add mushrooms and sautee until softened, about 5 minutes. Season with salt and pepper. Add spinach and bacon, then stir until spinach is wilted.
- Add eggs and cook, stirring occasionally. When eggs are almost set, add cheddar and continue cooking until cheddar is melted.
- Cook a package of bacon and a container of presliced mushrooms at the beginning of the week and add them to scrambles throughout the week.
