Pork Larb Wraps

This recipe from Food and Wine magazine made a delicious, healthy lunch while on a camping trip with friends. To keep with our plans to avoid refined grains and sugar, we omitted the rice powder and sugar from this dish and found the results were still delicious. Due to availability, we also substituted 2 serrano chiles for the Thai chiles and Romaine lettuce for the Boston lettuce.

1 lb baby carrots

Preparation:

  1. Follow instructions in recipe to prepare larb filling and dipping sauce.
  2. Serve filling on lettuce leaves, with a side of baby carrots.
