Pan-Seared Salmon with Spinach and Mushrooms
This recipe from Fine Cooking magazine made a particularly fancy dinner for a camping trip with friends.
Makes 4 servings
Ingredients as listed in recipe
5 oz spring mix
1/2 bunch red radishes, sliced.
3 tbsp chopped chives
3 tbsp olive oil
1-1/2 tbsp apple cider vinegar
Salt and pepper to taste
- Follow instructions in recipe to prepare spinach and mushroom mixture and then pan-sear the salmon.
- While the salmon is being seared, prepare the salad by combining spring mix, radishes and chives in a bowl, then tossing with olive oil and cider vinegar to coat.
Note - If two people are working on this meal, it works well for one to help prepare the salmon ingredients and then make the salad while the other cooks the spinach-mushroom mixture and sears the salad.
- We substituted pre-sliced crimini mushrooms for the shiitakes that the recipe calls for with good results.
