Seared Scallops with Citrus Quinoa, Herbs and Almonds
This recipe from Fine Cooking magazine comes together quickly and makes a lovely summer dinner. Lightly steamed chard rounds out the meal.
Makes 4 servings
Ingredients as listed in recipe
1 bunch swiss chard
- Wash and stem chard. Cut chard into ribbons and place in the top of a steamer with 1/2 inch of water.
- Follow instructions in recipe to prepare scallops and quinoa.
- Just before putting scallops on to sear, also turn heat on under chard. Steam for just a few minutes while the scallops are searing.
Note - If two people are working on this meal, it works well for one to prepare the quinoa's dressing as well as the chard while the other prepares the quinoa along with the herbs and almonds and sears the scallops.
