Cherry tomato, spinach and bacon scramble

*Cherry tomato, spinach and bacon scramble Black coffee*
*Makes 1 serving*

1/2 cup cherry tomatoes
Handful of baby spinach
1 slice bacon, cooked
2 tbsp sliced green onions
2 eggs, beaten
1/2 tbsp olive oil
Salt and pepper, to taste

Preparation:

  1. Halve tomatoes and slice green onion. Crumble bacon.
  2. Beat eggs.
  3. Heat olive oil over medium heat. Add green onions and bacon, sauteeing briefly. Add tomato halves and sautee until softened. Add spinach and cook until wilted.
  4. Add eggs and cook until firm, stirring occasionally.
