Cherry Tomato, Spinach and Bacon Scramble
1/2 cup cherry tomatoes
Handful of baby spinach
1 slice bacon, cooked
2 tbsp sliced green onions
2 eggs, beaten
1/2 tbsp olive oil
Salt and pepper, to taste
- Halve tomatoes and slice green onion. Crumble bacon.
- Beat eggs.
- Heat olive oil over medium heat. Add green onions and bacon, sauteeing briefly. Add tomato halves and sautee until softened. Add spinach and cook until wilted.
- Add eggs and cook until firm, stirring occasionally.
