Zucchini Scramble Topped with Tomato and Basil
Makes 1 serving
1/2 medium sized zucchini
1/2 cup chopped tomato
2 tbsp shredded basil
2 eggs, beaten
1/2 tbsp olive oil
Salt and pepper, to taste
- Chop tomato and shred basil. Mix together, adding a pinch of salt.
- Beat eggs.
- Heat olive oil over medium heat. Add zucchini and sautee until soft but not browned, about 5 minutes.
- Add eggs and cook until firm, stirring occasionally.
- Serve on plate, topped with tomato basil mixture and a side of Wasa cracker topped with mashed avocado.
