Zucchini scramble topped with tomato and basil

*Zucchini scramble topped with tomato and basil Wasa cracker with mashed avocado Black coffee*

Makes 1 serving

1/2 medium sized zucchini
1/2 cup chopped tomato
2 tbsp shredded basil
2 eggs, beaten
1/2 tbsp olive oil
Salt and pepper, to taste

Preparation:

  1. Chop tomato and shred basil. Mix together, adding a pinch of salt.
  2. Beat eggs.
  3. Heat olive oil over medium heat. Add zucchini and sautee until soft but not browned, about 5 minutes.
  4. Add eggs and cook until firm, stirring occasionally.
  5. Serve on plate, topped with tomato basil mixture and a side of Wasa cracker topped with mashed avocado.
