Tomato, Spinach and Bacon Scramble with Avocado
Tomato, spinach and bacon are a classic savory breakfast combination. Sliced avocado adds a touch of creaminess to this dish. Cooking a package of bacon and keeping leftovers in the fridge makes it easy to add small bits of flavor to meals like this throughout the week.
Makes 1 serving
Generous handful of baby spinach
1/8 cup chopped white onion
1/2 cup chopped tomato
1 slice crumbled, pre-cooked bacon
1 tsp olive oil
2 eggs, beaten
1/4 avocado, sliced
Vegetarian Option: Omit bacon
- Chop onion and tomato.
- Beat eggs.
- Heat olive oil over medium heat. Add onion and sautee until soft but not browned, about 1 minute. Add tomato and bacon, sauteeing for 1-2 minutes longer until tomato is softened and loses some of its moisture.
- Add baby spinach, sauteeing until wilted.
- Add beaten eggs and cook until firm, stirring occasionally.
- Serve on plate, topped with sliced avocado.
